Healthy Habit Goal #3, Pack a healthy school lunch

Bento lunchboxes make eating healthy and fun.


Healthy lunches are not a bad thing. Making sure your kids eat it all is another...

Have them pack their own lunch. The earlier they learn this skill, the easier your own life is going to be. And for the record: I am trying this this year with my pre-kindergartner....We shall see if it works. I plan to do this the night before because our mornings are hectic enough.


The kids must pick one item from each category. We have a list with pictures on the fridge that looks like this:

Fruit: Apple, applesauce, orange, 100% fruit leather, melon, grapes, banana, strawberries, etc.

Vegetables: Bag of carrots, sliced celery, peppers, cucumbers, fresh peas beans, etc.

High Fiber Grains: Whole wheat bread for sandwich, granola bar, cereal, cold pasta, cold rice, soup.

High protein food:Nuts, hard-boiled egg, meat for your sandwich, peanut butter for your sandwich (or dipping).

Dairy: Yogurt or cheese

Apple Cranberry French Toast Bake

I found this on $5 Dinners....
I love French Toast Casserrole and will have to try this one out this week.

I love how you can take SUPER STALE french bread and turn it into a breakfast (or dinner) masterpiece! By soaking the bread overnight in a fruity, egg-milk mixture, stale french bread can be completely transformed and redeemed!!!
Ingredients
1/2 cup brown sugar ($.15)
1 teaspoon ground cinnamon ($.03)
1/2 cup melted butter ($.40)
3 apples – peeled, cored and sliced ($.99)
1 cup dried cranberries (FREE!) From Walgreens trip two weeks ago!
1 French Loaf, cut into 1 inch slices ($.79) Look for these when they are marked down and then freeze if you don’t eat right away!
6 eggs, lightly beaten ($.60)
1 1/2 cups milk (I used rice milk!) ($.15)
1 tablespoon vanilla extract ($.10)
2 teaspoons ground cinnamon ($.05)
Favorite fruit: bananas, cantaloupe, berries or Fruit Salad ($1)
6-8 slices bacon ($.75) We rarely eat a whole package of bacon because it’s not a part of our regular diet, so I freeze what we don’t eat right away! Just separate it into however many slices you wish to eat so that you can just thaw what you need!

Directions
1. In a large bowl, mix together brown sugar and 1 teaspoon cinnamon. Mix in melted butter. Stir in chopped apples and dried cranberries until evenly coated. Pour into prepared pan.

Arrange french loaf slices in an even layer over apples.2. In same bowl, whisk together eggs, milk, vanilla and 2 teaspoons cinnamon. Pour over bread, making sure every slice is fully soaked. Cover with aluminum foil and refrigerate over night. THIS IS KEY!


3. Preheat over to 375 degrees. Remove dish from refrigerator while the over is heating. Bake covered for 40 minutes. Remove cover, and bake 5 minutes. Let stand 5 minutes before serving.4. Prepare your favorite fruit or turkey bacon.5. Serve Apple Cranberry French Toast Bake with Fruit and/or Bacon!

Back to School Lunches

Here are a few tips for packing lunches!!!
Adapted from $5 dinners

1. Think REUSABLE, not DISPOSABLE!!!

I did a cost comparison of a few popular lunch box items…prepacked vs. make and pack yourself. And “REUSABLE” saves…not only waste, but money as well!

-Carrots: 1 lb. bag of baby carrots $1.77 vs. 1 lb. bag of whole carrots $.67 - Take 3 minutes to -peel and cut yourself. $1 a week = $36 savings on the year!

-Raisins: Large 15 oz. box of raisins $2.49 vs. 7 oz. of smaller mini boxes $1.99 - Divide out raisins into small containers instead of sending the little boxes. $1 a week = $36

-Cheese Cubes: 16 oz. cheese block $2.99 vs. 7 oz. prepacked cut cheese $2.50 - Per ounce, you could save $2 a week by buying a large block and cutting your own cheese cubes!

This principle applies to all prepackaged “convenience” foods!

2. Spend 15-20 minutes on a Sunday night cutting carrots and cheese cubes, and dividing up raisins. Crackers, baked chips can easily be bagged or put in a container as well. I am all about ease and minimal prep in the morning. So all you have do the night before is have it all ready on the counter or fridge and throw it in the lunchbox in the morning on the way out the door.

If you could save $2 PER LUNCHBOX PER DAY by doing a little legwork yourself each week, you could save over $350 PER LUNCHBOX this school year! If you pack more than 1 lunch, there is potential for saving LOTS of $$$!

3. Give your kids a choice about what they want in their lunch. Offer grapes, raisins or blueberries. Don’t say “What do you want?” Because they’ll likely ask for a sugar laden snack!

4. Wrap your small blue ice pack in a small kitchen towel to keep the “thawing condensation” from making a mess in the lunchbox.

5. Keep sugar content LOW. Bake your own muffins vs. sending a “high fructose corn syrup” snack. Your teacher will thank you!

6. Of course, use coupons and watch sales.

7. And don’t forget a sweet note of adoration every few days!

Eating dinner together, Healthy Habit #2

A good goal for the new school year is to eat dinner as a family! There are so many reasons to eat dinner together. Here are a few:

1. Families who eat together develop strong parent child bonds
2. Teens who regularly have meals together are less likely to get into fights, take drugs, be promiscuous, and drink.
3. Children with families that eat together do better academically.
4. Families that eat together generally eat more nutritiously.
5. Children that are involved by setting the table, and clearing the dishes learn important skills.
6. They grow up so fast, it’s time to make memories!

Here is what holds some families back, and what you can do to change:

Problem: Not having dinner prepared!
Solution: Menu plan better and prep meals earlier.

Problem: Kids mess around at dinner and take forever to eat!
Solution: Enjoy them! I will only have them for a short time.

Problem: Meetings and evening activities get in the way.
Solution: Have breakfast together instead!

CVS 101 for Newbies: The Drugstore Game

When you play the Drugstore Game, utilizing the program to its fullest, you can literally save hundreds of dollars for a very small investment of time to research the CVS deals each week. In fact, I’ve saved over $300 just this summer alone.

Learning the ins and outs of the CVS ExtraCare Program may seem a little daunting at first, but it’s really quite simple when you break it down into the following steps.

This post will just tackle the basics of the program to get you started:

Verify that you have a CVS close to you. The easiest way to do this is using the CVS Store Finder. This seems pretty obvious, but with the price of gas these days, you won’t be doing yourself any favors if you’re offsetting your savings by spending a significant amount of money on fuel.

Sign up for your very own ExtraCare Card. You may sign up in a store. This is the easiest and fastest way to get your card.

Configure your scenarios. You’ll need to pick up a weekly store ad, as well as a monthly store ad. You can find the highlights of the weekly and monthly store ads, along with detailed weekly scenarios, posted right here or you can find the full lists on SlickDeals.net. You do need to be careful with the weekly ads, as they can vary between locations. Scan both ads to find the ExtraCare Bucks offers that most appeal to you. The most lucrative offers are usually the ones that are already free after ExtraCare Bucks (ECBs).

Your ultimate goal is to attempt to create transaction scenarios that actually earn you a profit in ECBs. You can achieve this by reducing your total amount spent out of pocket (OOP) with CVS dollar off coupons (ex. $3 off a $15 purchase), CVS item coupons, and manufacturer coupons. You can actually “stack” one CVS store coupon and one manufacturer coupon per item, and use both in conjunction with a $/$$ coupon.

A great example of this is a Adidas Deodorant offer. The deodorant was free after ECBs for the month of May, and there was a coupon available to purchase the deodorant for free in All You Magazine. Even though you aren’t paying OOP (out of pocket), you still earn the ECBs on the transaction. So you paid with the coupon, getting the item for free, and still earned $3.99 in ECBs to be used towards a future transaction.

Learn how to roll your ECBs. Once you’ve mastered the art of earning a profit on ECBs, you’ll want to move on to learning how to “roll” them, which is just another way of saying that you’re using them to pay for for items that earn more ECBs thus greatly reducing your OOP spending after your initial outlay. Learning how to effectively roll your ECBs will save you the most money in the long run.

Occasionally this may mean purchasing items that you don’t really want or need, but think of the many things you could do with these items. Glucose monitors are always a welcome donation at nursing homes. Toiletries can be donated to shelters. Use items as stocking stuffers, create gift baskets, or even sell them in garage/yard sales. You can find a use for just about everything if you think creatively.

Now it’s time to go shopping!!!

At the store, the first thing I do is grab all of the items I’ve incorporated into my scenarios. It’s not at all unusual for some items to be out of stock, so it helps to have a few backup items in mind if possible. I always bring my calculator and coupon keeper in case I have to do some on-the-spot configuring.

You may want to group your purchase into multiple transactions. Often I’ll do multiple transactions in one trip, so I group each transaction and organize my coupons before approaching the cashier so as to make checking out as efficient as possible. There are a couple of reasons for doing multiple transactions. One is to maximize your savings from $/$$ CVS coupons when they’re available. For example, if you have a $2/$10 purchase coupon, it makes more sense to do multiple transactions as close to $10 so you can get $2 off each one. A second reason would be to roll your ECBs that print from one transaction and use them to pay for your next transaction to minimize your actual OOP expenses.

Learn the proper order to present your coupons. When you’re ready to check out, first make sure the cashier scans your ExtraCare Card. Then it’s important that you present your coupons in exactly this order to maximize your savings – CVS dollar off transaction coupons, CVS store coupons/manufacturer coupons, and finally your ECBs. If you present your dollar off coupons after your manufacturer and store coupons, your total transaction amount may not be high enough to allow the system to accept the coupon.

One very important thing to mention about ECBs is that you will not get change for them, so make sure you use them to their fullest. If I have a dollar off transaction coupon, I generally try to stay as close as possible to the minimum transaction amount to maximize my savings, but if my total after coupons is less than the ECBs I have to pay with, I’ll pad my transaction with a few filler items so I’m not wasting the difference between the transaction amount and the ECBs. Filler items are just inexpensive items that you add to a transaction to get it above a certain subtotal. Trial size items are great, or in a pinch at the register you could grab a pack of gum.

Check your receipts and verify that all ECBs you earned printed correctly. It’s much easier to have issues resolved before you leave the store, but CVS Customer Care is generally very helpful as well. And make sure to put your ECBs in a safe place. Treat them like cash because trying to get them replaced is near impossible if you lose them.

Banana Sandwich Squares

My friend Sarah sent me this recipe. I can't wait to try it out on my kids.

Banana Sandwich Squares


2 ripe bananas
2 tbsp honey, optional
1/2 tsp vanilla extract
1/2 cup chunky peanut butter
6 pieces whole-grain bread
Sprinkle of ground cinnamon

1) Preheat oven to 400. Mix bananas, honey, vanilla, and pb together until smooth
2) Spread half the mixture on 2 pieces of bread. Place 2 more pieces of bread on top to make 2 sandwiches.
3) Spread remaining mixture on top of sandwiches. Top this with last 2 pieces of bread, making 2 tripe-decker sandwiches.
4) Cut each sandwich into quarters and place onto ungreased cookie sheet. Sprinkle ground cinnamon lightly onto sandwich squares and bake for 10 minutes. Serve warm.

I modified the recipe and didn't bake them. I tried it for Luke's school lunch. I just used the spread and Luke loved it.

Healthy Habits for a great school year Part 1

I love new beginnings. I often get teased for my constant resolve to “turn over a new leaf” as I like to call it. I love to set goals. I love to do new things. I love the hope, the excitement, and the visions of grandeur it fosters in my little head.

This week is the perfect opportunity for exactly that! I have a few health goals I want to incorporate to make this school year the best ever. I want to keep my kids at their optimum learning capacity. To avoid mid-winter illnesses. And to promote excellent behavior in the classroom.

So, here we go! Let the goals begin! Our first goal (and one I highly encourage all to take part in) is to:

EAT A SMART BREAKFAST

We do not have trouble with EATING breakfast. But we can eat a SMARTER breakfst for sure!

Here are the rules:

1. Never Skip breakfast! Studies show breakfast eaters perform better at school, have less weight problems, and eat healthier food overall.
2. Replace refined grains with whole grains! This is a must in order for kids to have the energy necessary to make it to lunch. Our kids go from 7:30 am till 12:00 without eating, and they can not suffer a crash because of refined, sugary foods.
3.Include some low-fat protein (nuts, legumes, eggs, or dairy). This helps give the carbs some staying power and feeds the brain.
4. Include FRUITS OR VEGGIES (For all the essential vitamins and minerals they provide)

Here are some breakfasts that would work well, and include all my requirements: (plus some random breakfast pictures to inspire me).

Oatmeal with milk and fruit (fresh or dried)
Whole grain toast with nut butter spread and sliced apples.
Almond Crusted French Toast (with a side of berries or on top)
Walnut and Banana pancakes (this recipe from our Tropicana weekend that I haven’t posted yet)
Cheerios with fruit and yogurt on top.
Eggs and potatoes (we would have to include veggies in the mix, or a side of fruit)
Orange Yogurt parfait (also from Tropicana weekend)

Taco Pasta

Ingredients
1.8 lb. ground beef ($2.14) Divided into 2 meals…$1.07 for this meal
1 6 oz. can tomato paste ($.39) Bought last week on sale with coupon
1 15 oz. can kidney beans ($.83)
2 garlic cloves ($.10)
1 Tbsp ground cumin ($.10)
1 tsp onion powder ($.05)
1 tsp chili powder ($.05)
Salt and Pepper
1 hot pepper(from the garden)
2 cups uncooked rotini pasta ($.50) Used half the box from last week’s $1/box deal!
1-2 cups shredded cheese ($.75)
4 corn cobs ($.76) On sale this week $.19 each

Directions

1. In large skillet, brown ground beef. Drain and return to skillet.
2. Add tomato paste plus 2 cans worth of water to the ground beef. Stir until paste becomes tomato-y sauce. Add drained and rinsed beans. Add crushed garlic, ground cumin, onion powder, chili powder and salt/pepper. Add finely chopped hot pepper for some extra kick! Stir through and let simmer for 4-5 minutes.
3. Add 2 cups uncooked pasta with 2 cups of water to the meat mixture. Cover and cook over medium high heat for 10-12 minutes, or until pasta has cooked through. Stir a few times while pasta is cooking. (Use rice pasta if gluten free!)
4. Once the pasta has cooked through, top with 1-2 cups shredded cheese and reduce heat to low and cover to let cheese melt. (Omit if dairy free!)
5. Boil corn in large saucepan for 4-5 minutes, or microwave in microwavable dish covered with plastic wrap for 2-2.5 minutes per ear.
6. Serve Taco Pasta with Corn on the Cob!
