Granola Bars



This reci is from my Sneaky Chef Cookbook. Which I highly reccomend. Anyone who knows me knows these are a staple in our home. I have been asked numerous times for the reci. So here it is.

Also when you are going through a box of granola bars from the store every other day or so. You have to come up with a solution. I am so thankful I found this reci as it is homemade, wholesome and lasts more then a few days since it makes a decent amount.


- 2/3 cup rolled oats, ground in a food processor to about ½ cup
- 1/2 cup blanched, slivered almonds, ground in a food processor to about 1/3 cup (omit if allergic, and add another 1/3 cup of ground oats instead)
- 1/4 cup wheat germ
- 1 cup crispy brown rice cereal (or Rice Krispies)
- 1 cup nonfat dry milk
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 cup canola oil
- 1/2 cup honey
- 1 teaspoon pure vanilla extract
- 1/4 cup chocolate chips (optional)
- Optional extra boost: 1/4 cup raisins or dried blueberries

> Preheat oven to 350 degrees. Line a 9-inch square or 9-by-13 inch baking pan completely with foil and butter the foil (or spray with oil).

> I food process the almonds and oats together. Then pour it in a medium bowl with wheat germ, cereal, dry milk, cinnamon, and salt. Mix in the canola oil, honey, vanilla extract, and chocolate chips (and/or dried fruit, optional). Mix well, then pour into the prepared baking pan. Press down with palm of hand( I take a piece of wax paper to press down with), evenly distributing the mixture into the corners of the dish and bake for 15 to 18 minutes. Check occasionally to prevent burning.

> Remove from the oven and using the foil to help you, lift the giant bar out of pan. Place on a flat surface and while still warm, cut into small bars.

Store in an airtight container for up to a week, or freeze in plastic bags.

Knoxville Cuts for the Cure October 4th


Knoxville area salon and spa professionals will join the fight against breast cancer on Sunday, Oct. 4, with “Cuts for the Cure.” The salons will provide services with all proceeds donated to the Knoxville Affiliate of Susan G. Komen for the Cure. Donations for haircuts are $30, manicures are $20 and pedicures are $30. Selected salons will offer massages for $1 per minute and facials for $30. Ingredients
2.2 lb. beef roast
1 cup BBQ sauce
1/2 cup Italian dressing
2 Tbsp brown sugar
2 Tbsp Worcestershire sauce
3 large sweet potatoes (about 1.5 lbs.)
1-2 tsp cinnamon
Butter or margarine, if you prefer!
Green Beans

Directions
1. Place beef roast in the slow cooker.
2. In small bowl, whisk together BBQ sauce, Italian dressing, brown sugar and Worcestershire sauce. Pour over the beef roast. Set slow cooker on low and cook for 8 hours.
3. Cut slits into sweet potatoes. Place in glass baking dish with 1/4 inch of water and cover with foil. Bake at 350 for 50-60 minutes, or until sweet potatoes are soft and cooked through. Cooking time can vary depending on thickness of the sweet potatoes. Serve with some sprinkles of cinnamon and butter/margarine if you prefer.
4. Wash and cut stems from green beans. Steam in stovetop steamer, or in microwavable dish with water, covered in plastic.
