’Twas the Night Before Christmas... Bethlehem Style
>> Friday, December 24, 2010
’Twas the night before Christmas, when all through the land
all the creatures were stirring for the Glory at hand.
The stars were all hung in the crisp evening sky,
but one shone much brighter and hung twice as high.
The shepherds were watching their flocks o'er the hills,
while Angels appeared to tell them God's will.
And Mary on her donkey and Joseph with his staff,
had just arrived from a far away land.
When a rap on the door, arose such a clatter,
the innkeeper answered to see what was the matter,
“Away to the stable” was all he could say,
for the rooms were all full, there was no place to stay.
The star shining through the rafters with a glow
gave the lustre of riches to objects below,
When, what to my wondering eyes should behold,
but a miniature manger that belonged to a foal.
With a little whimper, and a cry so mild,
I knew in a moment it must be the Christ Child.
More rapid than eagles, His Angels they came,
and sang Glory to God as they called Him by name:
"Wonderful Counselor, Mighty God, Our Savior and King!
Emmanuel, Eternal Father, new born Prince of Peace!"
"Holy, Holy, Holy" their voices they rang,
more beautiful than harps or bells as they sang.
The hay glowed like Gold as we all stared in awe,
at the sight we beheld that night until dawn
Even the animals, they lay there so still,
With a sense of reverence, to abide in Gods will.
And then, in a twinkling, I saw down the road
three shadows approaching with camels in tow.
As I drew in my head and was turning around,
from the Orient, the East, Three Kings came to town.
They were dressed in fine robes, from their heads to their toes
and had crowns of bright jewels that sparkled and glowed.
And each bearing a gift, of the finest of things,
Gold, Frankincense and Myrrh, the first offering to their King.
His eyes-- how they twinkled! His dimples how merry!
His cheeks were like roses, His nose like a cherry!
His droll little mouth was drawn up like a bow,
and His soft precious skin was as pure as the snow.
The star twinkled above with a wonderful light,
as the glory of God, it pierced through the night.
He had tiny hands and a little round face,
that shone when he smiled, with humility and grace.
He was perfect and precious, possessing Eternal Wealth,
and I bowed when I saw Him, in spite of myself.
The Peace that I felt and the Joy in my heart,
soon gave me a Hope that my new life would start.
I spoke not a word, but went straight to my home,
to tell of His story to all that I'd known.
And the love that surrounded me, I just had to share,
The Prophecy Fulfilled, the Messiah was here!
And as morning gave way and the Angels ascended,
They sang of this Christmas and the Gift that was given.
Then I heard the Lord proclaim throughout the whole Earth
“Eternal Life I give, through my only Sons birth”
Merry Christmas!!!

How to Eat Organic and Festive for Less
How to Eat Organic and Festive for Less
Many people are starting to warm up to the idea of buying organic foods, especially as more scientific studies show that organic produce can decrease the levels of pesticides we take in from our food sources. The only problem with organic? It can cost a pretty penny, sometimes more than twice as much as conventional foods. There are ways to have your organic cake and eat it too, however. Check out these guidelines for frugal organic shopping, as well as a cheap holiday recipe to whip up with your finds.
1. Eat Locally
The less food travels, the less transportation costs are reflected in its price. Use this map to find out what produce is in season in your home state; you’re more likely to find reasonably priced organics if they’ve been grown nearby.
2. Expand Your Produce Horizons
Less “exotic” foods are the ones that you’ll be able to find organic and cheaply during the winter season. Think beets, squash, and potatoes. Instead of buying those organic hothouse tomatoes in January for $8 a pound, consider what you can whip up with $.89 a pound baby potatoes.
3. Buy Frozen
In the wintertime, find your organic summertime crops in the freezer aisle. They’ll certainly be cheaper than trying to buy them fresh, shipped from some foreign locale. I promise that a strawberry pie made from frozen berries tastes nearly as good as a fancy, fresh one.
4. Invest in Community Supported Agriculture
Community-supported agriculture programs are partnerships between growers and residents in a local community. You pay an upfront fee and get a box of local, organic veggies shipped to your doorstep every week. These boxes can cost as little as $15 and include enough veggies to feed a family of 2-4 for a week. Not shabby at all. Local Harvest can help you find a CSA near you.
5. Try Chains
Even Wal-Mart is getting in on the organic action as of late. Bigger corporations have better negotiating power with growers; meaning they can buy lots of food at one time and thus, offer it more cheaply to customers. You can find both fresh and frozen organic items here, for less moolah.
Winter Color: Roasted Beets and Sautéed Beet Greens
Beets get a bad rap, but that’s usually because most of us have only experienced them in grandma’s sub-par borscht soup. Here’s a cheap winter recipe that you can whip up for a holiday dinner that will change your family’s beet prejudices. Plus, beets are full of nutrients, and they have great table presentation. This recipe serves 4, and only costs $3.04 to make!
Image via SeriousEats.comIngredients:
• 1 bunch organic beets with greens – Approx $2.09
• 1/4 cup organic olive oil – Approx $.30
• 2 organic garlic cloves, minced – Approx $.15
• 2 tablespoons chopped organic onion – Approx $.10
• 2 tablespoons organic butter – Approx $.40
• Salt and pepper
Directions:
1. Preheat oven to 350 degrees. Scrub the beets and greens, and cut off the greens and set aside for later. Place the beets in a baking pan, and cover with 2 tablespoons olive oil.
2. Cover the dish, and put it in the oven for at least 45 minutes. The beets are done when a butter knife can easily slide through them.
3. When the beets are almost done cookies, fire up a pan over medium heat. Put the rest of the olive oil in with the garlic and onion. Cut the beet greens into slices, and add them to the pan. Cook until wilted. Add salt and pepper.
4. Remove the beets from the oven. Peel them and chop them into pieces. Season with butter, salt, and pepper. Toss the beets and greens together in a clear glass bowl.
