Schools Out party

Chick-fil-A Kingston Overlook had a School Out Party this last week and I had a booth there. It was so fun to meet so many of you too. It was carnival style with games, bouncers, a fire truck to climb on and other fun stuff for the kids to do

There is a Kids night every Tuesday with activities and fun for the kids. Make sure you check it out and go sometime. Every Tuesday 5:30pm — 7:30pm at both Kingston Overlook and Turkey Creek locations.

Clinton Library Summer Reading Club 2011



The Clinton Public Library is doing a Summer Reading Program for kids. If you live in the area make sure you sign your kids up. You can check out all the information HERE.


Open to All Ages: Birth to 12th grade


Registration: Any time between June 1 and June 24. Sign up to get your reading log and attend programs.


Rules: All you have to do is read!


Read-to-Me – Read to your children and record the titles of books on their reading log. After reading 25 books, return the log to the library to receive a certificate and a completion prize.


Readers – Children who can read (up to those entering 5th grade): Read 10 books and record the titles on their reading log. After reading, return the log to the library to receive a certificate and a completion prize.


Teens – Teens entering grades 6 thru 12: Read 3 books and record the titles on their reading log. After reading, return the log to the library to receive a completion prize.
Prizes will be awarded beginning June 27, while supplies last.

Strawberry Summer Cake

My friend Amanda posted this recipe last week and I knew when I saw the picture I had to make it too. It is delish. I made it for a party yesterday and it got rave reviews.

Strawberry Summer Cake

recipe from Smitten Kitchen

6 tablespoons unsalted butter, at room temperature, plus extra for pie plate
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon table salt
1 cup plus 2 tablespoons granulated sugar
1 large egg
1/2 cup milk
1 teaspoon vanilla extract
1 pound strawberries, hulled and halved

Preheat oven to 350°F. Butter a 9 or 10-inch pie/cake pan or 9-inch deep-dish pie pan.

Whisk flour, baking powder and salt together in a small bowl. In a larger bowl, beat butter and 1 cup sugar until pale and fluffy with an electric mixer, about 3 minutes. Mix in egg, milk and vanilla until just combined. Add dry mixture gradually, mixing until just smooth.

Pour into prepared pie plate. Arrange strawberries, cut side down, on top of batter, as closely as possible in a single layer (though I had to overlap a few to get them all in). Sprinkle remaining 2 tablespoons sugar over berries.

Bake cake for 10 minutes then reduce oven temperature to 325°F and bake cake until golden brown and a tester comes out free of wet batter, about 50 minutes to 60 minutes. Let cool in pan on a rack. Cut into wedges. Serve with lightly whipped cream or ice cream.

Rite Aid Coupon Policy Changing


If you shop at Rite Aid, you’ll want to be aware that they updated their coupon policy this week.

Here are some of the changes:

You can no longer use a B1G1 coupon on a product that is on sale B1G1. You can use $ off coupons, but they must be less than the total of the product you are buying.

If something is on sale B1G1 you can only use 1 coupon per pair of items purchased.

There is a limit of 4 like items per transaction and you must leave sufficient stock in the store for other customers. This is up to the manager’s discretion.

You can use manufacturers coupons (starts with a 5), Rite Aid manufacturers coupons (starts with 49) and Rite Aid Valuable coupons (starts with 48) all on the same product as long as the coupons are not worth more than the product.

Coupons printed off the internet (that are not Rite Aid coupons) are only accepted up to $5.

Gulf Park Pool

I went to an Open House for Gulf Park Pool & Tennis today. It was great. My kids loved swimming there. The pool is very clean and has a great area for the kids to play and swim in. It was great day to go since it was so hot out. I enjoyed talking to some of the members. If you can they have an open house tomorrow, Sunday May 22 1pm - 6pm and you can check it out for FREE!!!

They have family nights, movie nights, cookouts and are open the last day of school until Labor day.

They have a swim team and also offer swimming lessons. The memberships are either for a full season or half season which is nice if you plan to do some traveling at the beginning of summer.

It is voted the one of the top three pools in Knoxville and it is conveniently located off Cedar Bluff in West Knoxville.

Children's Festival of Reading-May 21, 2011

How Extreme Couponing is Hurting Couponers


Hello Frugalissa Finds,

I went to Kroger tonight and I must say I am going to have to start shopping Sunday/Monday instead of my usual Thursday. There were binders all over the store. This lady in front of my snatched all the Wisks they had. The girl with her said don't you have plenty already? I am almost out of detergent! They were out of all the toothpaste on sale and I heard a group saying they would drive to another store. I really feel TLC extreme couponing is ruining couponing for the average family. It been harder and harder to find items in stock. One item I looked for for a month at 3 different stores, never in. Do you have any tips? I am afraid that coupon for the regular people is going to be ruined by people who fill there buggy with one product.

Yummy Strawberry Pie

Here is the recipe for the Strawberry Pie I made the other day. Just for the record I used frozen strawberries and then let them defrost and they were absolutely fabulous in this recipe.

Without further a do..The Yummy Strawberry Pie courtesy of my friend Katie. I believe it is a family recipe. This makes 2 pies.


Most important step-homemade pie crust


For 2 9-inch crusts:

2 C sifted flour
2tsp sugar
dash salt
Cut in 2/3C shortening with fork or pastry cutter

Slowly add ICE cold water and stir with fork until ball then roll it out and put in pie pans

Heat oven to 425...cover pie crusts with foil (butter side touching crusts) and fill foil with pie weights or beans

Bake crusts for about 10 minutes. Remove foil, reduce heat to 350 and bake crusts another 10-12 minutes until golden brown. Sit crusts out to cool until filled

For Strawberry filling-



Put about 2 1/2 C of whole strawberries into each pie crust. You can keep the strawberries whole or slice them if preferred. Make sure they are patted dry before putting into crust

Then clean and slice approximately ½ quart strawberries. Bring 1-1/3 cup sugar and ½ cup water to a boil. Add strawberries. Dissolve ¼ cup cornstarch in ¾ cup cold water. Add to syrup mixture. Cook approx. 10 minutes over low heat until thick and clear. Stir often. Add 1 tsp lemon juice. Pour glaze over whole strawberries in baked pie shell. Let cool in fridge for a few hours to set.

Top with homemade whipped cream (heavy whipping cream + sugar to taste)
